Chew on This | Cracked Earth Cake



If you want to make someone smile, bring them cake. This cake would be a very good choice.   


You'll need only four ingredients - butter, chocolate, eggs and sugar - with the optional powdered sugar dusted over the top. 


The cake comes out of the oven cracked and puffed up. Then sinks into a chocolate abyss. It's too good to pass up.

Here's the recipe:
Cracked Earth Cake
(adapted from Tyler Florence)
2 sticks butter
12 ounces dark or semi-sweet chocolate
9 eggs, separated
3/4 C sugar
powdered sugar - optional

Prepare your pan(s) by lightly coating with cooking spray. Preheat oven to 350℉.

Start by melting chocolate and butter together in a double broiler or, carefully, in the microwave. Mix until smooth and glossy and then set aside to slightly cool.

In a large bowl, rapidly whisk together your egg yolks and sugar. Whisk until the mixture becomes a light yellow. While continuing to whisk the egg yolk mixture, slowly pour a bit of your chocolate into the eggs. This will temper the yolks and keep them from curdling. Pour remaining chocolate into the egg yolk mixture and stir to completely combine.

In another bowl, beat the egg whites until stiff peaks form then carefully fold them into the chocolate mixture. Pour batter into prepared pan(s) and bake. 

Bake for 25-30 minutes or until top of cake puffs up and 'cracks'. Allow cake to cool and 10 minutes then dust with powdered sugar, serve and enjoy!

  6. These are the most tempting chocolatey goodies ive seen in a while :) You say the extra sugar on top is optional...it so isnt! haha These look so so moist and delicious, really love your photos too :)
