Chew on This | Lemony Chicken Orzo Soup

It's going to be a soup night tonight and I want something delicious and easy. Lemony Chicken Orzo Soup hits the mark. It's loaded with bright flavor and is a perfect choice on a cool fall night. 


Start your soup by adding chicken stock (homemade if you have it) and onions to a large stock pot. Cook until the onions are almost tender (don't boil).

In another pot, prepare your orzo following the package directions. Drain pasta thoroughly and set aside.


Add the orzo, lemon juice, and the cooked chicken to the stock pot when the onions are al dente.

Chiffonade the spinach (cut into thin strips) and add to the soup. Simmer for 10 minutes. 


Add salt and pepper to taste. Serve with toasted bread or pita triangles. Enjoy!

Lemony Chicken Orzo Soup

8 cups of chicken broth (homemade or canned)
1 medium onion, finely chopped
1/2 cup uncooked orzo
1/2 cup lemon juice
1 cup spinach, chiffonod
2 cups chicken, cooked and cut in small chunks
salt and pepper to taste

Make orzo according to package directions. Set aside.
