Chew on This | Dutch Baby

Yesterday morning started with the sound of congested sniffling. The small, warm body cuddled next to me kept snuffing her nose. Every ten seconds. It was pretty pitiful. And, sadly, really annoying.


I suggested that we crawl ourselves out of bed and cozy up together downstairs. Propped up on pillows and snuggled into blankets on the couch, we dozed and watched some cartoons while the sniffing began to diminish. Sitting there the sky changed from inky black to charcoal grey to blueish-pink. Then little boy feet thumped down the stairs. And grown man feet followed.


I fired up the oven and whisked up some simple ingredients. A pretty Dutch Baby puffed up and strawberries were sliced. 


Forks clattered on plates. Smiles perched on lips. It was a simple, happy Sunday morning.

Here's our recipe:
Dutch Baby
3/4 C milk
2 eggs
1/2 C flour
1/4 t cinnamon
1/8 t ground nutmeg
1 T sugar
1/4 t salt
1 t vanilla 
2 T butter
powdered sugar
fruit

Preheat oven to 425℉. 

In a bowl, whisk together your milk, eggs, flour, cinnamon, nutmeg, sugar, salt and vanilla.
Set aside.

Place your butter into an oven safe skillet (or pie plate) and put skillet into the preheated oven just until butter melts. Carefully remove skillet from the oven and, using a pastry brush, coat the butter across the bottom, sides and rim of the skillet.

Now pour your batter into the skillet and place back into the oven. Bake for 10 minutes. Then reduce the heat to 350℉ and bake for an additional 3-5 minutes or until browned and puffy.

Remove Dutch Baby from the oven and top with your favorite fruits and/or powdered sugar.
