Chew on This | Sweet Potato Biscuits

Last night the air gently breezing in from the window was cool. Chilly, actually. I was happily snuggled down in my bed with just my face poking out of the warm fleece blanket I had retrieved from the linen closet. It was good. It was crispy Fall goodness.


It was quiet. The tv had been turned off. The kids had been tucked into their beds hours earlier. The peacefulness of the moment was overwhelming. And sleep inducing. My eyes were starting to droop when I heard the first...cackle.


You know that freaky, prickly sensation you feel when you're startled by something? Yeah, I felt that. 

I was instantly brought out of my sleepy stupor. Listening hard, my muscles twitched, ready for the fight or flight response. 

Cackle, cackle. Yip, yip, yiiippppp. Yip, yip, yiiippppp.

Coyotes. Coyotes laughing it up outside somewhere, off in the not-too-far distance. They're chortling totally spooks me every time I hear it.

My first experience hearing their maniacal laughter, some years ago, was what I thought was a bunch of crazy girls screaming at a late night raging party. Which - 1. is ridiculous 2. raging parties don't really ever happen around here and finally, 3. girls screaming like that at a party would only mean something out of a horror movie was taking place.


Comforted in the fact that my pup was snoring away at my feet. And that the cackling was moving away, far, far away from our home. I repositioned myself in my blanket, put an ear towards the window, and listened to nature hum.

Here's our recipe:

These Sweet Potato Biscuits are great for an afternoon tea break, slathered with honey and butter. Or for making breakfast especially tasty, piled with scrambled egg whites and cheese. They freeze beautifully, so make a bunch (Bulk Baking anyone?) and pull them out of the freezer as needed or wanted!

Sweet Potato Biscuits
(makes about 18 biscuits)
2 C flour
2 1/2 t baking powder
1/2 t salt
2 T sugar
1/2 t cinnamon
1 C baked, mashed sweet potato
3 T melted coconut oil (or you could certainly use butter instead)
1/2 C milk

Preheat your oven to 400℉. Lightly spray a baking sheet with cooking spray.

In a large bowl, mix together your flour, baking powder, salt, sugar and cinnamon. Next, add your mashed sweet potato and, using a fork, mix to incorporate your potato thoroughly.

Slowly fold in your melted coconut oil and milk until your dough pulls away from the sides of the bowl and just comes together. You may not need to use all of your milk!

On a lightly floured surface, form your dough into a loose ball and then pat dough down to about 1/2" thickness. Using a 2" biscuit cutter, cut your biscuits out and place them onto a greased baking sheet. Biscuits go into the oven for 14-18 minutes, or until light golden brown. Enjoy!

  1. These looked so yummy that I had to have them!! Unfortunately baking is not my thing because I cant seem to follow directions lol. They ended up in the trash :( (A couple in my boyfriends tummy bless his soul)Thanks for the recipe and the challenge! Im going to get them right next time!
