Chew on This | Flank Steak Soft Tacos

I'm watching the clock and counting the hours. The Boy is done with school tomorrow afternoon. The Sprite is done on Wednesday. 

I cannot wait! 


We've got a lot to accomplish this summer. It seems our Summer Bucket List won't stop growing and growing because the kids continue to enthusiastically add to it. We'll actually be checking off a couple of things from the list this Friday. That's pretty efficient of us!

But we're not going to sweat it. We'll get done what we can get done. No pressure. That makes for a relaxed and awesome summer!


That's the vibe I plan to weave throughout our summer days - relaxed and awesome. These Flank Steak Soft Tacos fit seamlessly into this theme. They're a crock pot creation that brings super flavor without a bunch of fuss. Give 'em a try and let me know what you think!

Here's the recipe:

Flank Steak Soft Tacos
(recipe adapted and inspired via Eat, Live, Run)

Spice Rub:
1 t salt
1 t cumin
1/2 t seasoned salt
2 t chili powder
1/2 t onion powder
1 t garlic powder
1/2 t cayenne pepper
dash of black pepper

2 pounds flank steak

1 medium sweet onion, chopped
1 red pepper, chopped
1/4 C beef broth/stock
2 t Worcestershire sauce

Taco fixings:
flour tortillas
shredded cheddar cheese
cilantro
salsa
sour cream/plain Greek yogurt
guacamole/avocado slices
lime wedges

Crock Pot

To start, in a small bowl, mix all of your spices together thoroughly. Rub your spices all over your flank steak. Allow the steak to rest, covered in the rub, while you prepare the rest of your ingredients.

Next, layer your chopped onion and red pepper in the bottom of your crock pot. Pour in your beef stock and Worcestershire sauce. Place your flank steak on top and cover. Cook on low heat for 7-8 hours.

When the meat in perfectly fork tender, remove it from the pot and shred. Replace shredded meat back into the pot and turn crock pot temperature to 'Warm' or 'Keep Warm'.

Build your perfect soft taco with this delicious steak meat and the soft and flavorful onions and peppers that have cooked in the pot. Top with salsa, cilantro, sour cream, shredded cheese and avocado. Or whatever tickles your fancy! Enjoy!
