Chew on This | Corn and Black Bean Salsa

The Sprite and I were able to hit the local Farmer's Market this weekend. The weather was glorious and the market was packed. We weren't shopping for vegetables, as we have a sweet garden growing in our backyard. What we were looking for were those unique, local items. And the kettle corn.


We found the kettle corn straight away and bought a large bag. That settled, on we went to purchase some local, organic, grass-fed cow's milk cheese, some cashew butter, beeswax lotion and lip balm, and some pumpkin spice, all natural, dog treats  All delicious (yes, even the dog treats!). I had also been on the trail for some peaches and cantaloupe, but the farmer we wanted to buy from had sold out by the time strolled back to his stand. Lesson learned.

All in all, a very good day at the market. And being around all that fresh produce reminded me of a simple salsa my sister told me about many moons ago. Sun ripened corn and sweet, red bell pepper combined with black beans, cilantro and some seasoning. Divine!

Here's our recipe:

Corn and Black Bean Salsa

1 red bell pepper, seeds and ribs removed, finely chopped
2 ears corn, kernels removed
1 can (15 ounces) black beans, rinsed
1/4 C chopped cilantro
1 t Kosher salt
1/2 t garlic powder

Add all ingredients to a large bowl and mix throughly to combine. Adjust seasoning, if desired. Serve salsa with tortilla chips, on tacos, over a salad or with a spoon. Enjoy!
