Here's our recipe:

Pecan Pie Bars
Shortbread layer:
3 sticks butter (room temperature)
1 cup sugar
1 1/2 tsp vanilla
3 1/2 cups flour
1 pinch salt

Preheat oven to 350℉
9x13" casserole dish, generously sprayed with baking spray

In a mixing bowl, cream together butter and sugar, with a paddle attachment, stirring for  3-4 minutes. Add in vanilla. Slowly sift in flour and salt.  Don’t over mix the dough! Stop mixing when a crumbly dough forms. With your hands, pack the dough into two balls. Take one bal of dough and press into the prepared casserole dish, making a nice layer on the bottom of the dish (the remaining shortbread dough can be placed into a freezer storage bag and placed in the freezer for future use). Place dish into the oven for 20 minutes, or until the top of the shortbread layer is just beginning to turn golden. Remove from oven and immediately pour the pecan mixture over the cookie layer. Return dish to the oven for another 7-10 minutes. Allow to cool before cutting and serving. Enjoy!

Pecan Pie layer:
8 T (one stick) butter
1/4 C heavy cream
1 C granulated sugar
1/4 C honey
1 t vanilla
1/2 t salt
2 C chopped pecans

In a sauce pan over medium-low heat, combine all of your ingredients, excluding the pecans. Allow the mixture to cook for 5 minutes before adding in the pecans. Once the pecans are added, stir to incorporate. Remove mixture from the heat and wait to pour over the shortbread layer.
