Chew on This | Sunshine Fruit Salad Dressing

This fresh fruit salad is a sunburst of color and flavor.  The light and bright dressing is
to die for - a couple of family members have been known to sample it right out of the bowl.


Be sure to choose lots of colorful fresh fruit and let's get started!



This is what you will need for the delicious tangy dressing:
Pineapple juice, orange juice, 2 eggs, honey, grated orange peel, corn starch, heavy
whipping cream and sprig of mint for garnish.



First, crack the eggs into the top of a double boiler.


Beat the eggs slightly.

Now you can add the orange juice, pineapple juice, the grated orange peel and
the corn starch. A wee bit of corn starch helps to thicken the egg mixture.

The honey goes in...how sweet it is!

Cook stirring over hot water (not boiling water or you will end up with scrambled eggs).
Stir often and cook for 15 minutes or until thickened.


This is what the dressing will look like just before you cover it with plastic wrap
and put in the fridge to chill or overnight.


Just before serving, whip the heavy cream.

Whip it now!

Very gently, fold the whipped cream into the egg mixture.

Now this has just become a refreshing taste treat that your family will devour…it is
great right out of the bowl but hopefully it will make it to the fruit plate.


Add a sprig of mint on the top for garnish and you are ready to enjoy.

Here is the recipe:
Sunshine Fruit Salad Dressing
2 eggs, slightly beaten
1/4  C honey
1/4  C canned pineapple juice
1/2  C orange juice
1 T grated orange peel
1/2  C heavy cream, whipped
1/8  t corn starch
Your choice of delicious colorful fruit.
A sprig mint on top for garnish

In the top of a double boiler, beat the eggs slightly.
Combine all ingredients except cream and add to the eggs.  Cook over hot (not boiling) water.  Stir often.  Cook for 15 minutes or until thick.

Refrigerate covered until chilled or overnight.

Just before serving, whip the cream until soft peaks form.  Gently fold the whipped cream into the chilled mixture.  


Dollop dressing onto fruit and garnish top with a sprig of mint.
