Chew on This | Fig and Goat Cheese Pizza


Oh lordy!  I'm smitten. Completely smitten.  And I think you will be too!


First - the yummy ingredients.  Arugula, purple onion, parmesan cheese, goat cheese, fresh figs, fig balsamic glaze (or balsamic vinegar), olive oil, salt and pepper.  Lots of fresh goodness!

Look! Fresh figs. Aren't they beautiful? I love them.


And pizza dough.  You'll need it to perform the function of delicious edible plate that holds the fresh goodness.

Take your dough and flatten it out - you want a thin, crunchy crust.  Slather on some olive oil and sprinkle with salt and pepper.  Place in the oven to bake.


While the dough is baking in the oven, mix your arugula with olive oil and fig balsamic glaze.  
Yes, fig balsamic glaze does exist. I didn't know it either until recently.  My sister bought this fig glaze for me, isn't she nice?  You can get it here.

The fig glaze is sweet, so go easy.  If you can't find fig balsamic glaze, try balsamic vinegar.  That would be yummy too.


Once the dough is partially baked, take it out of the oven and start loading on your ingredients.
Sliced figs, purple onion, goat cheese, parmesan cheese and splashes of olive oil and fig glaze.


Oh looky!  Sliced prosciutto!  This is going to go on the pizza very close to the end of the baking process.


Ah.  Here we go.


When the prosciutto gets slightly browned on the edges, take the pizza out. Top with your prepared arugula.  


Who can resist this?  I cannot.  I did not.  
I ate pretty much half.  The husband ate the other half.  We were both very sorry that I didn't make two.  
I won't make that mistake again.


Man oh man.  This was awesome!  A.W.E.S.O.M.E.

Now, if you don't like figs, well, that just stinks. But, a good alternative would be sliced pears or apples.

Here's the recipe:
Fig and Goat Cheese Pizza

Pizza Dough - store bought or homemade
2-4 fresh figs
1/2 medium purple onion, thinly sliced
4 ozs. goat cheese (or more if you're like me)
1/4 cup parmesan cheese
4-6 slices prosciutto
2 cups arugula 
fig balsamic glaze
olive oil
salt and pepper 

Preheat oven to 425° F.

Flatten out pizza dough and place on a prepared baking sheet.  Brush the dough with some olive oil and sprinkle with salt and pepper.  Place in oven a partially bake (about 7-10 minutes).

While dough is baking, wash and dry arugula.  Toss arugula with fig balsamic glaze and olive oil.  Salt and pepper to taste.  Set aside.

Take pizza dough out of the oven and top with goat cheese, onion, fresh figs and parmesan cheese.  Dot with a little olive oil and fig glaze.  Return to oven and bake for an additional 5 minutes.  Remove pizza from oven again and place the prosciutto slices on top.  Again, return to oven and bake just until prosciutto begins to brown on the edges (approximately 2 minutes.)

Remove pizza from the oven for the final time and cover with the prepared arugula.  Cut and eat! YUM!
