Now that we've worked up an appetite, lets make some....Oriental Salad


I first had this salad at a potluck.  


I was drawn by the beautiful bright color, so I took a scoop. It was sweet, tangy, and
really different.  Loved it!  Asked for the recipe and got it...Yippee!
 



I added toasted sunflower seeds and green onions to mine. Sometimes I even add cashews.
The recipe makes enough for a group but we like it so much I have made half a recipe many times.



This is what you will need:

2 bags of shredded slaw, toasted sunflower seeds, mandarin oranges, Ramen noodles, green onions, sugar, cider vinegar, and olive oil.  Optional: slivered almonds or cashew.  


Slice up the green onions.


Give your sunflower seeds (slivered almonds or cashews if using) a little toast.


A few minutes in a small skillet or 5-6 minutes in a 350 degree oven will add lots of flavor

Drop the slaw, onions, nuts, and mandarin oranges in a pretty bowl and let's make the
dressing. (Save a few mandarin oranges, toasted sunflower seeds and the nuts of your
choice to garnish the top of the finished salad).

This is what you will need for the delicious dressing.


Using a shaker or a blender, thoroughly mix the vinegar, sugar, and 2 packets of Ramen seasoning packets and olive oil.


Blend, blend, blend...and pour on the slaw 1/2 hour before serving.


Break the Ramen noodles up into small pieces.


Just before serving, add the broken Ramen noodles, give the salad a quick stir and garnish
the top with the mandarin oranges, toasted sunflower seeds and the nuts you saved.



A different and delicious new taste...enjoy!

Here is the recipe:



Oriental Salad


2 bags cole slaw mix
2 pks beef Ramen noodles-break noodles into small pieces
3 green onions, cut into small slices
1 C sunflower seeds, toasted
1 lg can mandarin oranges
Optional:  1 C slivered almonds or cashews, toast in 350 degree oven for 5-6 minutes

Combine salad ingredients in a large bowl and pour Oriental Salad Dressing, which has been thoroughly mix, on salad ½ hour before serving.  Just before serving, break Ramen noodles into small pieces and toss with slaw.  Sprinkle the saved mandarin oranges, toasted   sunflower seeds, and optional nuts on the top of the salad and serve.  
Serves 8-10


Dressing:

1/3 C cider vinegar
2/3 C olive oil
2 beef Ramen noodle seasoning packets
3/4C sugar

Mix vinegar, olive oil, Ramen seasoning packets, and sugar in a blender or shaker, until thoroughly blended.  Pour dressing on slaw mixture ½ hour before serving.
