If you serve this fondue for your Super Bowl party (or any time, for that matter), you might receive more attention than you intended. Especially when it's all gone - you'll get looks of longing and desire. Needful, urgent stares. You'll flush and giggle. And then chastise yourself for not getting the hint.
More cheese fondue lady....duh.
Here are some of the important players involved in this most awesome fondue.
Gruyere cheese, cheddar cheese, beer, Dijon mustard, onion and garlic.
Start by melting some butter. Sauté your onions and garlic until soft.
Sprinkle with flour to make a roux. This roux will help to thicken the milk, beer and cheese into a creamy fondue.
Add your milk and whisk, whisk, whisk.
Look how thick and yummy. Time to add the rest of your ingredients.
Beer, mustard, salt, pepper and cheese! Continuously stir until smooth, creamy and silky.
Keep cheese warm in a fondue pot or a warmed bowl.
Accompany your fondue with some delicious soft pretzels or anything else that you think you want to dip into some yummy cheese.
And question any longing, lurking looks - at least until you've refilled the fondue pot.
Here's the recipe:
2 T butter
2 T diced onion
1 1/2 t minced garlic
2 T flour
1 C milk
2/3 C beer
1 T Dijon mustard
2 C shredded Gruyere cheese
1 C shredded cheddar cheese
1/2 t salt
1/4 t pepper
In a sauce pan, melt butter over medium heat. Add onion and garlic and cook until soft. Add flour and whisk until mixture is lightly browned. Add milk and continue whisking. Turn down heat, stir often and allow mixture to thicken.
Once mixture has thickened, add your beer, mustard and cheeses. Keep the heat low and stir continuously until the fondue is smooth and silky. Add your salt and pepper. Taste and adjust seasonings if necessary.
Serve in a fondue pot or warmed bowl. Dip in anything that tickles your fancy - soft pretzels, sourdough bread chunks, vegetables, sausage and/or pepperoni. Whatever you want - enjoy!
