Chew on This | Ham Bone Potato Soup

Ham bone, Ham bone, where ya been...carefully frozen away after the holidays,  just waiting for a day like this!

Weather advisories all over the place-for today, tonight, tomorrow.  Time to hunker down, make a pot of warm comfy potato soup, grab a book, and let it all happen! (Boy, have I changed).


You will need potatoes, onions, garlic, celery, butter, oil, chicken broth, ham bone, ham, cream, green onion, salt and pepper.  Optional:  cheddar cheese for garnish.



Grab a large stock pot, melt the butter and add 1T of oil.  Drop in 3/4 cup diced ham and the ham bone.  Sauté until ham is browned.   


Chop the onions in a small dice, slice the celery, and mince the garlic. 


Add them to the pot, stir to release all the good brown bits at the bottom of the pan.  Sauté until they are tender.  Add the chicken broth.  Stir to blend.


Drop in the diced potatoes and pop on a lid.  Simmer 1 hour.  (Grab your book and relax).


Times up...remove the ham bone, add the cream and salt and pepper to taste.  Stir to blend.


All done.  Garnish finished soup with thinly sliced green onion and optional cheddar cheese.

Here is the recipe:

Ham Bone Potato Soup

2 large onions, small dice
3 garlic cloves, minced
3 stalks celery, chopped
3/4 cup of chopped ham cut in 1/2" pieces 
1 ham bone
5-6 cups of chicken broth
7-8 potatoes, peeled and chopped in 1/2" dice
1 cup cream
1/2 cup sliced green onion
4 T butter
1 T oil
salt and pepper to taste
Optional: shredded cheddar cheese for garnish on top


In a large stock pot, melt butter and add 1T oil.  Saute' 3/4 cup of cut-up ham (1/2" pieces) and the ham bone until browned.  Chop the onions in a 1/2" dice, mince the garlic and slice the celery.  Add to the stock pot and stir to release all the brown bits in the bottom of the pan.

Pour in the chicken broth.  Drop in the peeled and diced potatoes.  Cover pot and simmer for
1 hour. 

Remove from heat and remove the ham bone.  Add the cream and salt and pepper to taste.  Stir to blend.

To serve: Add sliced green onions to the top.
Optional:  Garnish top with a sprinkle of cheddar cheese
