Chew on This | Peanut Brittle (made in the microwave)



Peanut brittle is delightful.  Crunchy, sweet, salty goodness. And super easy to make when you can whip it together in the microwave. Seriously easy.

Start off by combining salted, dry roasted nuts, sugar and corn syrup in a microwave safe bowl.



Make sure to mix thoroughly.


Once mixed, into the microwave for 4 1/2 minutes on high power.

This is my microwave. Helloooo there. You can see that it is powered by 1200 watts.  The cook times in this recipe are based on a 1200 watt microwave. Your microwave may have more or less wattage. You will have to adjust your cooking time up or down depending on the wattage of your microwave. (More on that in the recipe portion below).


While your nut mixture is cooking, get this cast of characters ready. Vanilla, butter and baking soda.



When the nuts are ready, carefully remove the hot and bubbly bowl from the microwave. Add your butter and vanilla and stir until combined.  Now, back into the microwave for another 2 minutes.


Two minutes later take your bowl out of the microwave and quickly stir in your baking soda.


Stir until your mixture looks foamy....


then spread the brittle out onto a non-stick baking sheet. Wait a good 20-30 minutes and the brittle will be set and ready for you to break into pieces to be enjoyed. That's it. Totally easy, right?


It's hard to stop at just one piece of brittle. I mean, look at it. It's calling my name.


And why not indulge. You can surely, very quickly, make a second 'first' batch. No one will ever know. And I'm not telling if you won't!

Here's the recipe:
Peanut Brittle (made in the microwave)

1 1/4 C salted, dry roasted peanuts
1 C sugar
3/4 C light corn syrup
2 T butter
1 1/2 t vanilla 
1/4 t baking soda
cookie sheet, prepared with a light coating of cooking spray

In a microwave safe bowl, stir together peanuts, sugar and corn syrup.  Cook on high in your microwave for *4 1/2 minutes or until mixture is bubbling. Carefully take bowl out of the microwave and add in your butter and vanilla.  Stir to combine thoroughly. Return bowl to the microwave and cook on high for *2 minutes.

Again, take the bowl carefully from the microwave and add in your baking soda.  Stir until mixture looks foamy.  Pour brittle onto a prepared cookie sheet and allow to set for 20-30 minutes.

*My microwave is 1200 watts - depending on your microwave wattage, you may have to cook for a longer or shorter period of time.
