Okay, the grill is still hot and I happen to have a ripe pineapple. You know what I'm going to do now. Slice it, grill it, add a scoop of ice cream, a dash of this and that, and I've just created tropical sweetness on a plate. Grilled pineapple with trimmings - the perfect ending to grilling out!
Preparing the pineapple is fast and easy if you follow these directions. With a sharp knife, cut both ends off the pineapple.
Trim the sides making sure to cut off the "eyes". You can cut the pineapple in slices or rings, just make sure to cut out the hard core. Now grab some honey, coconut, cinnamon and ice cream and head for the hot grill.
Grill the pineapple slices for 2-3 minutes on each side or until pineapple begins to soften and is beautifully caramelized.
Remove from grill, drizzle with honey, add a scoop of ice cream, a sprinkle of coconut and a dash of cinnamon. And there you have it, tropical sweetness on a plate. Easy and delicious!
Here is the recipe:
Grilled Pineapple
1 ripe pineapple
1 t honey per serving, or more to taste
1 scoop ice cream per serving (I use caramel sea salt-yum)
1 dash cinnamon
sprinkle of coconut
1 hot grill
Place the pineapple on a cutting surface. Using a sharp knife, cut both ends off.
Trim off the sides going deep enough to remove the eyes of the pineapple. You can cut
the pineapple in 1/2" rings or 3/4" slices. Remove the hard core.
Place pineapple on a hot gill for 2-3 minutes per side or until pineapple begins to soften and
becomes nicely caramelized.
Remove from grill and immediately drizzle both sides with honey. Place on a serving plate.
Drizzle more honey if desired. Add a scoop of ice cream, a sprinkle of coconut and a dash
of cinnamon. Prepare to enjoy.
