Chew on This | Chocolate Peanut Butter Buckeyes



Thank goodness for the CA's  (that would be, candy aficionados) in Ohio. They have created a most awesome treat which honors Ohio's state tree, the Buckeye tree. And, probably more likely, The Ohio State University Buckeyes. These delicious confections combine luscious chocolate and creamy peanut butter all rolled into one addictive bite. Hellooooo, buckeyes! 


Buckeyes are truly a childhood favorite around here-we all love them. They're eaten chilled, slightly frozen or at room temperature. And best of all for the buckeye maker - no baking! 

Quick and easy, just combine confectioner's sugar, creamy peanut butter and butter in
a large mixing bowl and give it a mix. 


Roll into 3/4" balls and refrigerate or quick freeze until firm.


Melt some chocolate and dip chilled peanut butter balls into the melted chocolate leaving a small amount of peanut butter showing. Thus, you've create a buckeye! Sinfully delicious and looks just like the real thing.  


Tah Dah!  Buckeyes-one cool treat.

Here is the recipe:

 Chocolate Peanut Butter Buckeyes

1 1/2 boxes of confectioner's sugar ( 1 1/2 pounds)
3 cups of peanut butter
1 cup butter
1 1/2 large bags of semi sweet chocolate chips (about 20 ounces total)

In a large mixing bowl, combine the confectioner's sugar, peanut butter, and butter.  When thoroughly mixed, roll into 3/4 - 1 " balls and place on a sil pat or parchment paper lined cookie sheet.

Chill in refrigerator at least 20 minutes, or quick freeze until firm.

Melt chocolate chips in a double boiler set over barely simmering water or in the microwave for 1 minute. Stir frequently until completely smooth.

Remove chilled peanut butter balls from fridge. Insert a toothpick or a wooden skewer, then dip chilled peanut butter balls in the melted chocolate leaving a small portion of the peanut butter showing at the top-it will look just like a buckeye. 

Place chocolate coated buckeyes back on the cookie sheet and return to the refrigerator or freezer until firm.  When ready to serve, smooth over the toothpick or skewer hole in the peanut butter center.

This yummy treat can be served right from the refrigerator, or slightly frozen.  If left out more than thirty minutes the buckeyes become soft but are just as delicious.
