Chew on This | Potato Skins


Is it a boy? Is it a girl? 

We went to a Reveal Party this weekend to find out! Not for our family, silly willies. For some dear friends who are having their third sweet pea come February. Have you ever heard 
of a Reveal Party? 

Well, the gist is this - 1. a 20-week ultrasound happens 2. baby's sex is determined 3. 'boy' 
or 'girl' is written on a sip of paper and sealed in an envelope 4. someone (in this case, the 
dad-to-be's mom) makes a cake coloring it either pink or blue 5. cake is frosted, concealing the surprise 6. a party is scheduled with appetizers, drinks and Reveal Cake 7. cake is cut 
8. Surprise!!! There's a blue cake inside - It's a boy!


It was so fun! Friendly wagers might have been made. Yummy food was laid out and eaten. Laughter filled the air. Memories were made. And one Boy might have gotten himself covered in mud. Good times.


I brought Potato Skins. They were crispy, cheesy and bacon-y. Just the way I love them.


And even though potato skins are so cheesy circa-1980's Friday's Restaurant. I just don't care. They are so cheesy good.

Here's my recipe:

Potato Skins
8 medium potatoes, baked
1/4 C canola oil
1/2 t salt
1/8 t pepper
1/2 t garlic powder
1/4 t seasoned salt
pinch of cayenne pepper
1 1/2 C shredded cheddar cheese
1/2 C grated parmesan cheese
8-10 strips of bacon, cooked and crumbled
3 green onion, chopped
2 T chopped chives
1/2 C sour cream 

Preheat oven to 475℉. Line a cookie sheet with parchment paper or foil.

Slice baked potatoes in half, length-wise. Using a spoon, hollow out each half leaving about 1/4" of potato within the skin. Place potatoes on the cookie sheet and set aside.

In a small bowl, combine oil, salt, pepper, garlic powder, seasoned salt and cayenne. Stir ingredients together and using a pastry brush, coat the inside and outside of each potato skin. Place skins onto cookie sheet and into the oven for 8 minutes. Turn skins over and replace back into the oven for another 7-8 minutes.

While skins are baking, combine your cheeses. Remove skins from the oven and fill with cheese mixture and bacon. Place skins back into the oven until cheese is melted, about 3 minutes. Place your potato skins on a serving tray and sprinkle with green onions and chives. Serve sour cream in a small serving dish with a spoon on the side so you can dollop cream onto your potato skins. Enjoy!

  1. Delicious! A wonderful taste of the skins:) I used butter, but otherwise follow the instructions. Definitely make them again soon!
