What would you want for your anniversary if you were celebrating 45 years of marriage? A luxury vacation to an exotic country? Concert or theatre tickets in New York? Dinner made by a personal chef? A new car?
Or maybe you'd go more low key. A quiet walk on the beach, hand in hand. A picnic in the park. Taking a long drive through the country and stopping at local shops and farm stands. An aperitif in front of the fireplace.
Chocolaty smooth. Warm bourbon goodness. This mousse has got moxie. And no, this mousse is not my only offering to them for their wedding anniversary - but it's the best tasting.

Here's our recipe:
Bourbon Chocolate Mousse
3 egg yolks
1/4 C granulated sugar
1 T butter
pinch of salt
4.5-5 ounces dark chocolate, chopped
1 1/2 C heavy whipping cream
1-2 T bourbon
chocolate shavings for garnish
To start, place a bowl over a pot of simmering water. Add your egg yolks, sugar, butter and salt to the bowl and whisk until sugar is dissolved. Next, add your chocolate and whisk until the chocolate is mostly melted. Remove your bowl from the pot and whisk until chocolate is completely melted. Allow the chocolate mixture to cool for 10-15 minutes.
In a cold mixing bowl, add your bourbon and heavy whipping cream. Whisk on high until soft peaks form. Fold half of the whipped cream into the chocolate. Once incorporated, add the remaining whipped cream and fold gently until combined.
Spoon your mousse into serving dishes, cover with plastic wrap and place into the refrigerator for at least 2 hours. When you're ready to serve, garnish each dish with chocolate shavings. Enjoy!
