Chew on This | Peach Bars

Where are you? Are you in a place where the peaches are ripe and ready for picking? Lucky.
It's not quite time for peaches here but I am ready for them. 


These yummy peach bars are just a hint of what's to come once the local orchards let us ravage their trees. Okay, ravage, not the best word choice here but if you're a peach lover you get what I'm saying. Yes?


These bars are a happy taste of Summer. Try them!

Here's the recipe:

Peach Bars

Crust/Crumb Layer:
1 box white or yellow cake mix
1/3 C butter, softened
1 egg

3 C peaches, cut into 1" pieces

Cream Layer:
1 package (8 ounces) cream cheese, softened
1/3 C granulated sugar
1 egg
1 t vanilla

Preheat oven to 350℉ and spray a 9x13" pan with baking spray.

Combine, in a large bowl, your dry cake mix, egg and butter. Mix until crumbly. Reserve 1 1/2 C of the crumbs for the topping. Press the remaining crumbs into your 9x13" pan to create your crust. Place pan into the oven for 10 minutes to par bake.

While the crust is baking, prepare your cream layer. In a bowl, beat together your cream cheese, sugar, egg and vanilla. That's it!

When your crust is ready, layer on your delicious peaches. Cover the peaches with the cream mixture. And finally, take the remaining 1 1/2 C of cake mix crumbs and sprinkle them evenly over the cream layer. Place pan back into the oven and bake until light, golden brown, approximately 30-40 minutes. Allow to mostly cool and cut into bars and serve with vanilla bean ice cream! Enjoy!
