I'm guessing that between now and New Year's you'll be entertaining or someone else will be entertaining you. I know, just a lucky guess.
So, what kind of appetizers will you serve? What kind of dish will you bring to the party? I suppose it depends on the flavor of the shindig, right? Formal, casual. Football bash, elegant Thanksgiving. Well, we have quite a few appetizer offerings here on this old site that would fit any occasion you find yourself in. But might I suggest that if you're having a more laid back affair, these Broccoli Chicken Bites are pretty dang awesome.
These little bites, baked up in mini muffin tins, reward you with ease of preparation and delicious flavor.
Bake these babies up for your next easy going celebration and watch them disappear lickity split!

Here's my recipe:
Broccoli Chicken Bites
(makes 24 mini bites)
(makes 24 mini bites)
1 egg, lightly beaten
4 ounces cream cheese, softened
1 1/2 C shredded cheddar cheese
1 t salt
1/2 t garlic powder
4 C chopped, steamed broccoli
1 C cooked, shredded chicken
2 T flax meal (or you could replace the flax meal with panko/breadcrumbs)
Preheat your oven to 350℉ and prepare your mini muffin tin by spraying lightly with baking spray.
In a large bowl, add your lightly beaten egg, cream cheese, shredded cheddar, salt and garlic powder. Mix until thoroughly combined. Next, fold in your steamed broccoli, chicken and flax meal (I added my broccoli while it was still warm, it helped to make the cheeses melty and combining the ingredients that much easier).
Spoon a heaping tablespoon of the mixture into each mini muffin cup and bake for 15-20 minutes, or until set. Carefully remove bites for the tin (I used a knife to release the bites for the tin), plate and serve. Enjoy!
