Chew on This | Apple Ring Pancakes

Tomorrow. It begins.

We've got backpacks ready. Lunches made. Clothes ironed. And, happily, excited kids looking forward to getting on that bus and starting a brand new school year.

Uh, I'm not ready for them to go. I'm going to try and tempt them to stay, but I don't think it'll work. They're minds have switched to school-mode.


I'll make one last ditch effort in the morning, to get them to stay, by making these awesomely good Apple Ring Pancakes. Hope it works!!

Here's our recipe:

Apple Ring Pancakes
(serves 4)
2 C pancake mix (recipe below)
1 C buttermilk
2 eggs
1 t cinnamon
3 Granny Smith apples, peeled, cored and sliced into 1/8" rings

Over medium, heat your pancake cooking pan. 

Prepare your pancake batter by combining your pancake mix, buttermilk, and eggs. Stir to combine thoroughly. Add your cinnamon and stir.

Take your prepared apple rings and dip into the pancake batter, covering the slice completely. Place the coated apple onto the hot griddle. Turn apple when batter begins to bubble and turn golden brown. Serve with an extra sprinkle of cinnamon and some maple syrup. Delicious!

Pancake Mix:
3 C flour
1 1/2 T baking soda
1 T sugar
1 1/2 t salt
1/2 C butter

In a large bowl, combine your flour, baking soda, sugar, and salt. Stir to incorporate. Next, cut in your butter until mixture is coarse and crumbly.

Left over mixture can be stored in a air tight container, in the refrigerator, for up to 3 months.

*To make pancakes - combine 2 C pancake mix, 1 C buttermilk (or milk) and 2 eggs. Stir to combine and pour pancakes onto a hot buttered griddle to make. Enjoy!
