Chew on This | (Self-Rising Flour) Chocolate Chip and Pecan Cookies

The first week of school has almost come to a close. I'm happy to say that I have survived  - so far.

Oh, I suppose you wanted me to let you know if the children had survived? That they weren't having separation anxiety from their dear, old mom. That they were fully in the groove of school and having fun getting to know their teachers, meeting new friends, and not minding the homework just yet?

Sorry. All that's happening. Yahoo for them.



Seriously, its been a good week for all of us. A few adjustments, here and there, otherwise, it has been a pretty sweet start. 

Speaking of sweet - Mimi made these fabulous cookies for the kids for an after school snack on their first day. She's awesome like that! And these cookies were totally awesome, as well. Like...fer sure!

Self-rising flour is the trick here. It saves you a few steps and helps to make a glorious thick and chewy cookie. The other trick, rolling your dough in sugar  - AMAZING!! 
Your back-to-school bunch will gobble them up!!

Here's our recipe:

(Self-Rising Flour) Chocolate Chip and Pecan Cookies

4 ounces butter
1/2 C granulated sugar
1/2 C brown sugar
1 t vanilla
1 egg
1 3/4 C self-rising flour
1/2 t salt
6 ounces chocolate chips
3/4 C toasted, lightly salted, chopped pecans

1/2 C Granulated sugar, in a small bowl

Preheat oven to 375℉. Line a baking sheet with parchment paper or lightly spray with cooking spray.

In a large bowl, cream together your butter and sugars. Add in your vanilla and egg and mix until combined. While stirring, slowly add your self-rising flour and salt. Once thoroughly combined, fold in your chocolate chips and pecans.

Scoop out a rounded tablespoonfuls of cookie dough and roll them in your small bowl of granulated sugar, until coated. Place dough onto cookie sheet and then into the oven to  bake for 10-12 minutes, or until lightly browned. Remove finished cookies from the oven and try not to eat them immediately (you'll burn your tongue). Enjoy!!
