Happy New Year!
So, we're eight days in. How are things going for you so far? Are you feeling anxious and tentative about this year or are you hammering it with unbridled abandon?
Last year at this time we were in the midst of situations that would come to be life altering. For us, 2012 started with a loud and obnoxious jolt. This year, eight days in? Quiet softness is the best description I can muster at the moment. A good thing.

Celebrate with this amazing, not-too-sweet, Chocolate Coconut Quick Bread! It'll put a skip in your new year step!

Here's my recipe:
Chocolate Coconut Quick Bread
1 3/4 C flour
1 t salt
2 t baking soda
1/2 C cocoa powder
1/2 C shredded coconut (sweetened or unsweetened, your choice)
1/2 C chocolate chips
3/4 C granulated sugar
1/2 C melted butter
1 C milk
2 eggs, slightly beaten
1 t vanilla
Preheat your oven to 350℉. Prepare your 5x9" loaf pan by spraying it lightly with a baking spray.
In a large bowl, combine your flour, salt, baking soda, cocoa powder, shredded coconut and chocolate chips. In another bowl, combine your sugar, melted butter, milk, eggs and vanilla. Pour your wet ingredients into your dry ingredients and fold together until mixed thoroughly.
Pour your batter into the loaf pan and bake for approximately 55 minutes or until a toothpick tester comes out of the loaf with moist crumbs. Enjoy!
