Chew on This | Broccoli Salad


Little broccoli tree salad.  YUM!

Those little trees used to make me turn up my nose. I'd turn my back and run like the wind.

What the heck was my deal?  

Discuss.

No, no.  There's not enough time to delve into that.  Let's quickly make some delicious broccoli salad.


Here's what you'll need:

Broccoli, bacon, cashews, raisins (or dried cranberries, yum), purple onion and sweet and sour salad dressing.




Clean and chop your broccoli.



Dice your purple onion and toss it in with your broccoli.



Raisins. Add'em.

Or add dried cranberries - or a combination of both.  Very good idea.



BACON!



Now you can add your dressing.  You'll be surprised how very little you'll need.  
This stuff spreads out.



Mix.  Toss.  Coat.



Let this sit in the refrigerator for at least four hours.  And mix, toss, coat again.
Finally, sprinkle on your cashews. Waiting to add your cashews until serving time will keep them crunchy. Very, very good idea!

Here's your recipe:
Broccoli Salad

1 or 2 heads  of broccoli
1/2 of a medium sized purple onion, chopped
1 cup raisins
4-5 slices cooked bacon, crumbled
1/3 - 1/2 cup Sweet and Sour Salad dressing (I use Hartville Kitchen's brand)
1/2 cup cashew pieces

Place your clean and chopped broccoli into a large bowl.  Make sure you broccoli 
is in bite sized pieces.

Dice up half of a medium sized purple onion and toss in with broccoli.  Add your 
raisins and bacon.

Now you can add your salad dressing.  Start off with a lesser amount of dressing - stir to coat.  Let the ingredients marinate, this way you can see if you need to add more dressing.  Add more dressing if needed.

Finally, right before serving, add your cashew pieces.  Delish!

  1. Love, Love, Love broccoli salad. I've never heard of sweet and sour dressing. I usually use mayo, vinegar, sugar and a few other ingredients that I can't remember (C:
