Chew on This | Snowball Butter Cookies

Baking holiday cookies might be ol' fashion fun, but eating them is as popular as ever.




When I ask what kind of cookies do they want me to make this year, "they" very rarely
ask for something new.  These melt-in-your-mouth Snowball Butter Cookies are always on the list...they're easy peasy to make and even easier to enjoy.


This is what you will need:
Flour, salt, powdered sugar, butter, vanilla,  and  toasted nuts like walnuts, pecans, or almonds.  I used almonds.





In a large mixing bowl blend the softened butter with the flour, sugar and vanilla.  Add the toasted, very finely chopped nuts of your choice.  (Spread nuts out on a cookie sheet

and bake 6-8 minutes at 325℉.) Stir just until mixed.



Shape cookie mixture into balls with a mellon or small ice cream baller.  Place on an ungreased cookie sheet.  And into the oven they go for 15-18 minutes at 325℉.  Do not brown.


Roll warm cookies in additional powdered sugar...and  Ta dah!  




If you want them to be around for Christmas, I suggest freezing them...they are delicious
frozen too, only I would know that!  Kids probably won't look for them in the freezer-unless they're Geminis!!

This is what you will need:


Snowball Butter Cookies


2    Cups flour                                                                   Bake 325℉ for 15 - 18 minutes
1/2 t salt                                                                            Makes about 40 cookies
1  C powdered sugar + extra
1  C butter, softened
8 oz toasted nuts, very finely chopped (pecans, almonds, or walnuts)
1T + 1t  vanilla

In a large mixing bowl, blend butter with flour, sugar, salt, and vanilla just until combined.  Gradually stir in the toasted finely chopped nuts.

(To toast nuts, spread nuts out on a cookie sheet and bake 6-8 minutes at 325)

Shape dough into balls using a mellon baller or hands.   Place on an ungreased cookie sheet or sil pat liner. 

Bake at 325 degrees for 15 to 18 minutes.  Do not brown cookies. Roll warm cookies in additional powdered sugar.    Give a dusting of powdered sugar just before serving.   These cookies freeze.  Enjoy.
