Chew on This | Chicken Challenge - Chicken Fajitas




Your mouth will water just waiting to bite into this healthier version of the traditional beef fajita.  You can use a prepared fajita seasoning package for an even faster prep or use the recipe below for a yummy fast and delicious meal.  Life is all about being creative...so use the veggies and toppings your family likes - and if ya like cheese, go for it too.


This is what you will need:
Precooked shredded chicken, red and green peppers, an onion, tomato, cumin, chili powder, cilantro, garlic, oil, chopped green chiles (shown in another photo), and 8 flour tortillas.  Optional:  lime, fajita seasoning packet, sour cream, avocado, and sliced green onion.




In a large skillet, saut√© the onions, green and red peppers in 2 T oil until almost tender.


Add in the shredded chicken, a can of chopped green peppers, cilantro, chili powder, garlic, cumin, and salt and pepper to taste.  (I used Trader Joe's frozen garlic and cilantro cubes)...so handy!


Blend thoroughly and cook just to warm chicken...and we are ready to wrap things up!


Divide fajita filling between the tortilla shells, roll, plate, and drizzle with any remaining juices from the skillet.  Garnish tops with sour cream, sliced green onion, chopped tomatoes, chopped avocado and if ya want to cheese it up, add you favorite.

Here is the recipe:

Chicken Fajitas
2 T oil
1/2 to 3/4 thinly sliced green pepper
1/2 to 3/4 thinly sliced red pepper
1 to 2  whole onions cut in thin wedges slices
2 t chopped fresh garlic (or 3 cubes frozen)
1 t cilantro
1 t cumin or more to taste
1 t chili powder or more to taste
6-7 oz precooked shredded chicken
1 can of chopped green chiles
8 tortillas
Suggestions for garnish:
1/2 cup sour cream
6 green onions cut in small slices
avocado cut in small dice 
large plum tomato cut in small dice
shredded cheese of choice
lime wedge on each plate

In a large skillet, saute' the onions, and red and green pepper in 2 T oil until almost
tender. 
Add the chopped green chiles, chili powder, cumin, garlic, cilantro, the shredded precooked
chicken, and salt and pepper to taste.  Blend thoroughly and cook until chicken is heated
through.

Divide fajita mixture between 8 flour tortillas and roll up. 

Drizzle any remaining pan juice on the top of the fajitas and add garnish of choice.  Serve immediately.
