Chew on This | Chicken Challenge - Chicken Broccoli Lasagna




Generally, I'm not in love with lasagna.  I like lasagna all right.  Red sauce or meat sauce.  Ricotta cheese and mozzarella cheese.  Good stuff.

I do really, really like this lasagna.  It's different.  I really like different.  I hope you like it too!

The sauce is the key.  Creamy and rich.  It's got butter, milk and heavy cream.  Not too shabby. Yeow!  Be careful not to eat it all.  Spoonful by spoonful.  Something my waistline would like to discuss with me.  Sorry, not now.  Busy cooking.

Melted butter and flour.  This is how the sauce starts.  (Seems like I've been starting here a lot lately)

 


Add your liquids and mix.


Time to temper your egg.  Add about a 1/4 cup of your warm milk/butter mixture and whisk.  Then pour back into the sauce pan and add your seasonings.


Finally, stir in your Parmesan cheese.  Take sauce off the heat and prepare to layer your lasagna!


A layer of sauce on the bottom of your baking dish.


Noodles.


Chicken.


Broccoli.


Grated Parmesan and sauce.


Repeat.


Into the oven.  Out of the oven.  Into my belly.  Pretty dang good!

Here's the recipe:
Chicken and Broccoli Lasagna


Preheat oven to 375℉.

Sauce:
4 T butter
3 T flour
1 cup chicken broth
1 cup milk
1/2 cup heavy cream
1 egg
1/2 cup grated Parmesan cheese
1 t garlic 
1/2 t poultry seasoning
1 t salt
1/2 t pepper
1/4 t nutmeg


In a sauce pan over medium heat, melt butter and then sprinkle with flour.  Cook out the raw flour by stirring and cooking for about 2-3 minutes.  Add chicken broth and whisk the make sure add the flour is combined - no lumps.  Turn down the pan if the sauce begins to bubble.  Add in your milk and heavy cream.  Stir to thicken.


In a small bowl beat one egg.  Take about a 1/4 cup of your milk mixture and slowly pour it onto your egg, whisking while pouring to ensure the egg doesn't scramble.  Now pour this tempered egg into the milk mixture in your sauce pan.  Stir, stir, stir.  Add your spices - garlic, poultry seasoning, salt, pepper and nutmeg.  And finally, stir in your cheese.  Take pan off the heat and prepare to layer your lasagna.


Lasagna:
1 1/2 cups cooked, diced chicken
1 box 'oven ready' lasagna noodles (or regular cooked noodles prepared per box directions)
2 cups chopped raw broccoli
1 1/2 cups grated Parmesan cheese
prepared sauce (recipe above)

Coat the bottom of an 8"x11" baking dish with a thin layer of sauce.  Top sauce with noodles. Top noodles with chicken, broccoli, sauce and grated cheese.  Noodles, chicken, broccoli, sauce and grated cheese.   Stop when you reach the top of your baking dish - spread on more grated cheese.


Cover with foil and bake for approximately 30 minutes.  Remove foil and bake until top is lightly browned.  Once out of the oven let set for about 5-10 minutes.  Slice and serve
