We call it an inside out cheeseburger. The melted, gooey cheese is stuffed inside an amped up beef patty, then perfectly grilled and popped onto a Parmesan rosemary onion bun. I swear you'll never settle for a plain ol' hamburg again. And neither will anyone else.
This is what you will need: Ground beef, bacon, garlic, onions, Italian seasoning, blue cheese, cream cheese, optional dash of hot sauce, hamburger buns, butter, salt and pepper to taste.
To start, I use 8 whole slices of bacon and cut them in half (2 slices per burger) and fry or microwave until very crisp. Set aside.
In a large bowl, combine the ground beef, very finely minced garlic, finely minced onions, Italian seasoning, salt and pepper and optional dash of hot sauce. Mix thoroughly.
Divide into eight equal portions and roll into a ball. Divide each ball in half and flatten into two patties.
Take 1 T of the blue cheese mixture and spread on one of the patties up to 1/2" from the outside edge.
Transfer the patties to a hot grill and grill for 3-4 minutes on each side for medium rare, or longer, if you desire.
Place the warmed buns on a serving plate and top each with a hot grilled, stuffed blue cheese patty. Garnish with 2 slices of crisp bacon. Add the tops to the buns and enjoy immediately.

2 pounds of 80-85% ground beef (makes 8, 1/4 pound hamburger patties)
4 oz of blue cheese
4 oz cream cheese
3 garlic cloves, very finely minced
1/4 cup finely minced onion
1 t Italian seasoning
salt and pepper to taste
Optional: dash of hot sauce
8 slices of bacon cut in half, fried crisp (2 slices per sandwich)
8 hamburg buns, sliced and buttered

Take 1 T of the blue cheese mixture and spread on one of the patties up to 1/2 " from the outside edge. Top with the second patty and pinch edges together. Repeat with the rest of the seven balls.
Put the stuffed patties on a hot grill and grill about 3-4 minutes per side for medium rare, or until done. Butter buns and grill, inside down, until light golden (about 30-60 seconds).
Place the buns on a serving plate and top each with a grilled patty. Add 2 slices of crisp bacon. Replace the tops of the buns and serve immediately.
