Chew on This | Vegan Avocado Chocolate Pudding

Have you ever been a part of a supper club? A bunch of my friends and I formed a Gourmet Club some years ago and, while it lasted, it was really fun. Our premise was to choose a regional cuisine for the meal, assign a course to each person or couple and rotate the dinner between the homes of the members on a monthly basis. 

We enjoyed an Italian meal, an all fondue meal, Greek, French and just a few others. Unfortunately, the group fizzled out due to time constraints, life and other mishmash. Bummer.


I bring all of this up because Mimi was fortunate enough to be invited to a really unique dinner group just this last Friday. Each month this ever growing group of interesting and energetic individuals comes together to share their love of Raw Vegan cuisine. 

For this dinner group, everyone is asked to bring a dish to share. Mimi said that the variety of food was incredible and absolutely delicious. She couldn't believe how creative the dishes were! She was so inspired. Her enthusiasm grabbed hold of me tightly, so I decided to make a recipe that has been flooding TasteSpotting and food gawker lately- Avocado Chocolate Pudding.


The skeptical Husband was enamored. The kids were smitten. Mimi gushed. And I was very pleased with the incredibly rich chocolatey taste and the thick, creamy consistency. 


I hope to be able to participate in this Raw Vegan dinner group in the future. Until then, I plan to try, create and test as many Raw Vegan recipes as I can so to dazzle these groupies with something amazing!

Here's the recipe:

Vegan Avocado Chocolate Pudding

2 avocados, peeled and pitted
5 T cocoa powder*
2 - 3 T vanilla almond milk
2 t vanilla
1/4 C raw agave nectar
sprinkle of salt

In a food processor or a blender, puree your avocados, cocoa powder, almond milk, vanilla and agave nectar until smooth.
Place in serving dishes and sprinkle with a touch salt. Enjoy!
*My pudding version here isn't 100% Raw Vegan but can be made so by changing out regular cocoa powder for Raw Vegan Cacao Powder.
