Chew on This | Asparagus & Brie Pizza with Low-Carb Crust

I love pizza. Love, love, love pizza. I have a family that also loves pizza. Loves, loves, loves pizza. Anytime we travel, near or far, the first thing we do is search out a few locals to wax poetic about their favorite pizza joint. Then we march our fannies right over to the most beloved pizza place and  dig in. 

I guess we have a pizza tradition. Ahhh, traditions.


I also make pizza quite a bit at home. Friday nights are usually pizza nights at our house. We bake them in the oven, on the grill or sometimes on the panini press. We do thick crust or thin crust. Tomato sauce, creamy white cheese sauce, garlic oil sauce or no sauce. Whatever peaks our interest, we'll try. A favorite of ours, the Fig and Goat Cheese Pizza. So amazing!


This Spring, I think I have perfected a wonderful, low-carb pizza that celebrates two of my favorite ingredients - asparagus and brie cheese.

The crust is low, low carb and so, so good. Made with flax meal, it has a savory, nutty taste that will win over any skeptics (Melissa at I Breathe...I'm Hungry is the genius behind this crust). And the combination of asparagus and brie and bacon will knock your socks off. For. Real.

Here's our recipe:
Asparagus & Brie Pizza with Low-Carb Crust

4 ounces softened cream cheese
2 eggs
1/4 C finely grated parmesan cheese
1/2 t salt
1/2 t garlic powder
3/4 - 1 C flax meal

Preheat oven to 400℉. Place a piece of parchment on a cookie sheet and set aside.

Make this delicious low-carb crust by combining your cream cheese, eggs, parmesan, salt and garlic powder in a food processor or blender. Pulse ingredients to thoroughly combine. Scrape down sides of processor bowl and add 3/4 C flax meal. Pulse to mix. Mixture should pull away slightly from the sides and be paste-like. If the batter is too wet, add more flax meal until you reach the proper consistency.  

Spread the batter over your parchment covered cookie sheet. Use an off-set spatula (or your hands) to smooth the batter and make it about 1/4" thick. Place cookie sheet into the preheated oven for 15-20 minutes.

While crust is baking, prepare your toppings.

Toppings:
1 bunch raw asparagus, cleaned and trimmed, tossed in 2 T olive oil, 1/2 t salt, 1/4 t pepper and 1/2 t garlic powder 
6 ounces brie, sliced into pieces
4- 5 pieces cooked bacon, crumbled
1/4 C finely grated parmesan cheese

When pizza crust is ready, top it first with your asparagus. Cover your asparagus with your brie and bacon. Place cookie sheet back into the oven for 7-8 minutes to melt the brie and roast the asparagus. When done, sprinkle your parmesan cheese on top, slice and eat. Enjoy!
