So, I totally missed making this salsa for Cinco de Mayo. Dang it!
You don't really need an occasion to make this salsa though. And you shouldn't wait for an occasion. It's very simple. It's very delicious.
The mangoes I bought for this recipe sat around for awhile waiting for me to finally remember to pick up some jalapeños at the store. It took me three trips to the market to not forget. Umm, I'm thinking I should write a more complete list or do some brain exercises to help my dusty memory. Probably both.
Maybe eating a bowlful of this stuff, with all of it's heathy ingredients, will help my sluggish brain? I hope so. Because I ate a bowlful.
I have not one regret.
Thankfully, I have extra jalapeños to whip up another batch. Maybe I'll be able to share this time around.
Here's our recipe:
Mango Salsa
1 1/2 C mango, diced
1 jalapeño, finely chopped (ribs and seeds removed if you want a more mild salsa)
1/4 C purple onion, finely chopped
3/4 C loosely packed, chopped cilantro
1 T lime juice
1 T lime juice
1 t Kosher salt
Place all ingredients in a bowl and stir gently to combine. Spoon into a serving dish and, if you're like me, eat with a fork. Or, serve with my Homemade Tortilla Chips or over grilled chicken or shrimp. Enjoy!
