Chew on This | Zucchini Waffles

We decided to get Netflix. Well, I decided to get Netflix. Me, the one that doesn't want the people in this household sitting mindlessly in front of the television turning their brains to goo, signed right up without hesitation.

Here's how it happened. I had reached my limit with the cost of our satellite service. We don't do premium channels or sports packages but the amount we paid for the 250 channels we received was ridiculous. Three quarters or more of those channels we didn't even watch. I told The Husband I was going to get the bare-bones, minimum package and be done with it. Our nearly-gooey brains sighed with relief.


The Husband had no problem with this idea until he found out that the basic package I was shooting for did not include the four thousand ESPN channels he coveted. You would have thought the world was about to end. The kids also weighed in when they realized that their favorite shows would also no longer be available.

Really? 

To appease the masses (that would be you Husband) I found the least expensive satellite package that included ESPN. It was a price I could live with, for now. And it happened to include a couple of stations that the kids would be happy with. But it still had holes, and Netflix filled the gap. With all of this, I'm saving $30 a month. That's pretty sweet.



However, I am having some deleterious effects from this change. Netflix offers the ability for me to watch a television series that I've considered watching but haven't had the time to. I have become addicted to watching entire seasons of certain shows.

Here's our recipe:

These zucchini waffles are a perfect way to use up the bounty of zucchini you're probably seeing in your gardens right now. Make a double batch and freeze the extras for a quick and delicious breakfast for the kids once school starts.

Zucchini Waffles
2 eggs 
1/4 t salt
1 t vanilla
1/2 t cinnamon
1/4 t nutmeg
2 T sugar
4 t baking powder
1 C milk
1/4 C melted butter
1 C grated zucchini
2 C all-purpose flour
Waffle maker

Heat your waffle maker and spray lightly with non-stick cooking spray.

  • In a large bowl, whisk together your eggs, salt, vanilla, cinnamon, nutmeg, baking powder and sugar. While still whisking, add in your milk and melted butter. Whisk in your grated zucchini. Now add your flour, one cup at a time, whisking after each addition and ensuring there are no lumps in the batter. Ladle batter onto your waffle maker and cook each waffle until lightly browned. Yields 6-7 waffles.

  1. I made these over the weekend and they turned out great. They were perfectly light and fluffy. The mix of spices had just the right amount of flavor to help remind me that fall will soon be here. Thanks for the recipe!
