I was up early this morning. 4:26am, to be exact. I willed myself to drift back to sleep. No go. So instead, I made lists in my head. Do this, do that. Talk to so-and-so, email, email...blah, blah, blah. By the time I decided it was okay to get up and go downstairs, I had forgotten all my lists, all my good intentions.
It was my intention to serve these gooey, baked mozzarella sticks to my kids and their buddies that were visiting today. No go. We had a lot of fun to pack into the day and baking up these yummies did not fit on the agenda.
A blessing in disguise? Yes. I did get around to baking these babies up, and intentionally chowing down on them, this evening while the kids cleaned up the messes they made with their friends during the day.
And yes, I did share. Really, I did.

Here's our recipe:
Baked Mozzarella Sticks
10 mozzarella string cheese sticks (cut in half to make 20 small sticks, if you like)
1/2 C flour
1/2 C Greek yogurt
1/4 C milk
1 t seasoned salt
1 1/4 C panko bread crumbs (or regular breads crumbs)
1 1/2 t Italian seasoning
1 cookie sheet, cover with foil and spray lightly with baking spray

To start, place cheese sticks into the freeze while you prepare your coating. For your coating, you'll need three small bowls. In the first bowl, place your flour. In the second bowl, mix together your Greek yogurt, milk and seasoned salt. And in your third bowl, combine your bread crumbs with your Italian seasoning.
Remove the cheese sticks from the freezer. Dip a frozen cheese stick into the flour, gently shake off excess flour, then place cheese stick into the Greek yogurt/milk mixture. Coat thoroughly. Finally, into the bread crumbs - cover completely. Repeat this process until all cheese sticks are coated.
Once you're finished, place the cheese sticks into the freeze for an hour, or until you're ready to bake. Don't skip this step! This second freezer visit helps to keep the cheese intact while baking.
When you're ready to bake, preheat your oven to 400℉. Line a cookie sheet with foil and spray lightly with baking spray. Remove your cheese sticks from the freezer and place on the cookie sheet to bake. Bake sticks about 4-5 minutes, then turn them over. Bake an additional 4 minutes. Don't over bake or they'll turn into cheese puddles! Serve warm with your choice of dipping sauce. Enjoy!!!
