I hosted a meeting at my house last week and beyond needing to prepare content, I needed to prepare some food.
These little Caprese and Beef Skewers were one of my offerings and they were a hit. These bites were a fresh taste of the summer food we long for during these snowy, cold days of February. Their quick assembly leaves you time to look over your notes and come to the meeting table prepped and ready.
Make these for your next get together - be it a meeting of the minds or a meeting of the social butterflies.

Here's our recipe:
Caprese and Beef Skewers
25-30 grape tomatoes
25-30 fresh basil leaves
1 (8 ounce) log beef sausage, cut into chunks (I used a cured, Summer Beef sausage - you could also use chorizo or even pepperoni)
6 ounces fresh mozzarella, cut into 25-30 cubes (I used fresh, small mozzarella balls purchased in the specialty cheese section at my local grocery)
2 T balsamic vinegar
1 T extra virgin olive oil
Kosher salt
25-30 four inch wood skewers
Thread tomatoes, basil leaves, mozzarella, and sausage alternately onto your wood skewers. Place skewers onto a serving tray. Drizzle your vinegar and oil evenly over the skewers. Sprinkle with salt. Serve immediately or cover and keep in the refrigerator until ready to serve.
