Chew on This | Chicken Challenge - Buffalo Chicken Dip



How do you think we did with this crazy Chicken Challenge?  I think we did pretty darn good!  And boy were we surprised - you get a lot out of a $4.99 chicken.  We'd love to hear your comments, suggestions and ideas on how you stretch your kitchen dollars - drop us a line via the comments link below or fromwhichthingsgrow@gmail.com.  


The last offering for the Chicken Challenge is this delicious Buffalo Chicken Dip.  With Super Bowl parties right around the corner, this dip will be a welcomed addition.  


This dip is actually very simple to put together.  So if you happen to do a lot of multi-tasking (and who doesn't), preparing this dip can fit right into your long list of things to do without messing up your rhythm.  

Start with a sauce pan, over medium-low heat, and place cream cheese, blue cheese dressing and your favorite hot sauce.  We love Frank's Red Hot Sauce - yum - so that's what I used.  




Also add your shredded cheddar.  And start stirring.  Keeping the heat on medium-low will keep the mixture from separating.


Once the cheesy mixture is melded together, fold in your chicken.


Once everything is combined, pour the dip into an oven safe bowl and bake until bubbly - about 20 minutes.


Serve your dip with celery and tortilla chips.  Even chunks of sour dough bread, which is a delicious accompaniment.  You'll have plenty for you.  And plenty to share!  Enjoy!

Here's the recipe:
Buffalo Chicken Dip

1 cup cooked, diced chicken
1 cup chunky blue cheese dressing
1/2 cup hot sauce (I use Frank's Red Hot)
1 1/2 cups shredded cheddar cheese
8 ounces cream cheese

Preheat oven to 350℉.

In a sauce pan over medium-low heat, blend together blue cheese dressing, hot sauce, cheddar cheese and cream cheese.  Stir until combined and smooth.  Do not allow mixture to boil.  Fold in chicken.  

Take mixture off heat and pour into an oven safe bowl.  Place bowl into the oven and bake until dip is bubbly - about 15-20 minutes.  Serve with celery sticks, sour dough bread wedges and/or tortilla chips.  Yum!
